Method

In a medium saucepan, bring the broth to a simmer. Keep warm over low heat.
In a separate pan, melt one tablespoon of butter over medium heat. Add the shallot and garlic, cooking until softened, about 3 minutes.
Add the rice and cook, stirring, until the edges become translucent, about 3 minutes.


Pour in the wine and cook until it has evaporated, about 2 minutes.
Ladle in 1/2 cup of the warm broth and cook, stirring occasionally, until the liquid has been completely absorbed, about 4 minutes.
Continue adding the broth 1/2 cup at a time, stirring frequently. Wait until each addition is absorbed before adding the next.


After about 15 minutes, the rice will be al dente and the risotto should be thick and creamy. Remove from the heat and stir in the remaining butter, asparagus, peas, and parmesan. The residual heat will cook the veggies.
