Egg-stra Special Easter Bakes
Stuck for activities for the kids over the Easter Holidays?  Round up your little ones and whip up some delicious treats together! Who says treats can't be both delicious and healthy? We've pulled together three quick and easy recipes that are ideal for mums looking to keep the little ones entertained while sneaking in some wholesome ingredients. Don’t forget, you can easily pack these recipes into your cool bag and venture out for a family picnic. Let’s hop to it!
1. Carrot-Cake Energy Bites Â
These no-bake energy bites pack all the scrumptious flavour of carrot cake without the sugar overload. Perfect for a healthy Easter treat!
IngredientsÂ
·     1 cup grated carrots
·     1 cup rolled oats
·     1/2 cup almond butter (or peanut butter)
·     1/2 cup raisins
·     1 tbsp maple syrup (optional)
·     1 tsp cinnamon
InstructionsÂ
1. Â Â Mix all the ingredients in a bowl until well combined.
2.   Scoop out spoonful’s of the mixture and roll into bite-sized balls.
3. Â Â Chill in the fridge for 30 minutes to firm up.
4. Â Â Store in an airtight container for up to 5 days.

2. Bunny-Approved Banana Choco Pops
These frozen treats are as fun to make as they are to eat—plus, they’re made with wholesome ingredients!
IngredientsÂ
·     2-3 bananas, peeled and cut in half
·     200g dark chocolate (70% cocoa or higher)
·     Shredded coconut, sprinkles, or crushed nuts for decoration
·     Lollipop sticks or skewers
InstructionsÂ
1. Â Â Insert a stick into each banana half and place them on a lined baking tray.
2. Â Â Freeze for about 2 hours or until firm.
3. Â Â Melt the dark chocolate in a microwave-safe bowl or over a double boiler.
4. Â Â Dip the frozen bananas into the chocolate and quickly sprinkle your favourite toppings before the chocolate sets.
5. Â Â Freeze again for 30 minutes.
Why they’re great: These are a healthier alternative to traditional choc ices, and the kids will have so much fun decorating them!Â
3. Mini Egg-Cookies with a TwistÂ
Swap out sugary dough with oat-based goodness in these adorable mini egg cookies. Bonus: they’re gluten-free!
IngredientsÂ
·     1 cup oats (blended into flour)
·     1/2 cup rolled oats
·     1/4 cup almond butter
·     1/4 cup honey or maple syrup
·     1 egg
·     1/2 cup naturally sweetened chocolate chips
InstructionsÂ
1.   Preheat your oven to 180°C.
2. Â Â Mix the oat flour, rolled oats, almond butter, honey (or maple syrup), and egg in a bowl until well combined.
3. Â Â Fold in the chocolate chips.
4. Â Â Scoop small dollops of dough onto a lined baking tray, pressing lightly to flatten.
5. Â Â Decorate with a couple of extra chocolate chips on top for that "mini egg" look.
6. Â Â Bake for 10-12 minutes and cool on a rack.
